The day starts early at the distillery, around 6 a.m. [Distiller’s Name] begins by reviewing the production schedule for the day. The team is focusing on a batch of single malt whisky today, so the first task is inspecting the grain and ensuring it's been properly malted.
“We’re hands-on with every step of the process,” says [Distiller’s Name]. “Quality control begins the moment the raw ingredients arrive.”
By midday, the fermentation process has completed, and it’s time to move the mash into the still. Today’s run will be a slow distillation to capture the deep, complex flavors our whiskies are known for.
The distiller carefully monitors the temperature and the flow of the spirit, using a combination of technology and instinct honed over years. “Every distillation is a bit different,” [Distiller’s Name] explains, “so you have to adjust and fine-tune to get it just right.”
Once the distillation process is complete, it’s time to taste some of the whisky currently aging in barrels. Today, we’re sampling a four-year-old bourbon that’s nearing the end of its aging process.
“This is where patience comes in,” [Distiller’s Name] laughs. “Good things take time, and in this case, four years.”
As the day winds down, [Distiller’s Name] reviews notes and plans for the next day’s batch. Distillation is both an art and a science, requiring focus, patience, and passion at every step.
